
Rainbow Delight (Agar Agar / China Grass)
INGREDIENTS
* ½ Litre Full Fat Milk (preferably long-life milk)
* 1 litre Water
* ½ Litre Full Fat Milk (preferably long-life milk)
* Sugar for taste (A bit sweeter that normal taste, as once dessert it set, the sweetness will reduce) – Approx: 1 Litre water for ½ cup sugar & ½ litre milk for ½ cup sugar)
* China Grass powder/ Agar Agar Powder (½ Litre milk use 1 teaspoon of powder).
* China Grass powder/ Agar Agar Powder (1 Litre water use 2 teaspoon of powder).
* This powder can be bought in Asian shops.
* Rose water / Rose essence or Kewra water – for flavouring
* Food colour (red and green)
* Decoration (optional): Basil Seeds (Sabja Seeds / Tukh Malanga / Tukmaria)
METHOD
Water Layers – Using Red & Green colours for this layer
Heat the water in a pan, and whilst the water is warming up, stir the Agar Agar powder into the water– make sure the powder is NOT put in when water is HOT, otherwise the power will form lumps.
Keep stirring the water until powder is fully dissolved.
Add the sugar, continue to stir until the sugar is also dissolved, now add the Basil seeds.
Let the water boil 2 to 3 times, then switch the heat off.
Now add the Rose water (or rose essence or Kewra Water)
Now to make two separate layers of colour with the water mixture:
Divide the water mixture into 2 parts. In one part– add green food colouring, in the other part add red food colouring.
Milk Layer – No colours for this layer
Heat the milk in a pan, and whiltst the milk is warming up, stir the Agar Agar powder into the milk – make sure the pwoder is NOT put in when milk is HOT, otherwise the power will form lumps.
Keep stirring the milk until powder is fully dissolved.
Add the sugar, continue to stir until the sugar is also dissolved
Let the milk boil 2 to 3 times, then switch the heat off.
Now add the Rose water (or rose essence or Kewra Water)
Now to assemble the layered dessert:
In glasses or clear dessert bowls pour equal amount of Red layer of the water. – Then put into fridge to set (approximately 10 to 15 minutes). Once set, take out and now in equal parts in all glasses, put the Milk White layer.
Place back in fridge to set. Once set take out and now put in equal parts the Green layer of water. Now put back in fridge to SET and cool. When set, ready to serve!
Handy Tips:
Make sure each layer is set before adding the next layers.
Can add some nuts or sprinkles for decoration on the top
