Fathimah’s Spicy Rolls 

Quantity: Approx 20 Rolls

DOUGH INGREDIENTS

DRY INGREDIENTS

3 cup Self- Raising flour or Plain flour (if you are using Plain flour then you need 1/2 teaspoon baking powder). 3 teaspoon yeast Pinch of salt and sugar

LIQUID INGREDIENTS

1/2 cup warm yoghurt (not hot) 1/2 cup warm milk (not hot) 6 tablespoon oil ¼ cup warm water

FILLING

Up to you – some ideas: Mincemeat, chicken, tuna, feta cheese & spinach etc Method: Pre-heat oven to 175 to 200 degrees Celsius. Put all dry ingredients in a mixing bowl, make a well in the middle. Mix the yoghurt and milk together and slowly pour into the bowl (into well). Add the oil Mix and knead all items together in one direction, until dough is soft. However, If dough is not loose enough, add a little bit of warm water and knead into dough.

Keep the dough in a pre-oiled bag, keep it in a warm place (e.g. boiler cupboard). After 1 hour, the dough should have risen ( double the size). When you touch it, it should bounce back.

Make into approx 20 balls- palm size. Roll each ball with rolling pin, ensure the edges of each circle is flattened.

Place approx 1 tablespoon filling in the flatten circle and then pinch the dough it all together and make sure it is sealed. Turn the ball over and brush each individual ball (roll) with beaten egg and 1 teaspoon sugar mixture, to get a glaze. Sprinkle black seed (Kalonji) and/or white sesame seed.

Let it stand for 10 mins Bake in a 175 to 200 degrees Pre-heated oven for approx 20 mins (until golden brown)

Take out and Enjoy!

Handy tips: You can half bake the rolls, cool down and then put in freezer. Before eating bake for a bit till golden brown – ready to eat. Good idea for Ramadan! Roll Shapes – round, long or even a croissant shape!
